毛豆烧芋头

主料:毛豆200g, 芋头300g

辅料: 香葱1棵

调料:盐3个,油15m l,白胡椒粉2g

1 毛豆剥掉豆荚,留毛豆米备用。将毛豆米放入小煮锅中,加入能够没过毛豆的冷水,大火煮开后调成中火再煮5分钟至毛豆变熟。

2 芋头洗净表皮泥沙,放入蒸锅大火蒸20分钟熟(高压锅10-15分),用筷子可以轻松刺穿即可。放凉后去皮切块。

3 炒锅中注入油,大火加热至5成热,下葱花,然后放入芋头和毛豆翻炒,加100ml水煮开,调入白胡椒粉和盐,翻炒均匀即可出锅。
