冰皮月饼

冰皮月餅
約做10個(直徑約5cm,高3cm月餅模)

一.抹茶冰皮   20g/個

材料:
低筋麵粉10g, 抹茶粉1茶匙,糯米粉23g,再來米粉20g,
糖粉20g(10g),煉乳25g,牛奶90g,無鹽奶油20g,

二.內餡   25g/個
豆沙250g

步驟:
1.將冰皮材料中的低筋麵粉+抹茶粉用濾網過篩
2. 無鹽奶油隔水加熱融化成液體
3.所有乾性材料依序放入盆中
4.加入煉乳及牛奶用打蛋器混合均勻
5.最後加入融化的無鹽奶油混合均勻
6.密封醒置30分鐘
7.放入微波炉里加1分钟,然后拿出来搅拌一下。 放入微波炉里加30秒,然后拿出来搅拌成糰狀,密封放涼。
8.完全涼透的麵皮放入乾淨塑膠袋中,隔著塑膠袋搓揉麵糰直到麵糰變的光滑均勻(約2-3分鐘)
9.戴上手套,豆沙均分成10等份,搓揉成圓形
10.麵皮分割成10等份,搓揉成圓形
11.將小麵皮在手中捏扁,慢慢壓成大圓片
12.放入分割好的豆沙餡
13.利用手掌虎口慢慢將餅皮推開包覆住整個內餡,收口捏至完全密合滾圓
14.放入模型中
15.用手將麵團壓緊填滿,扣出模型即可
16.完成後密封放冰箱冷藏
