Sweet and Sour Pork Ribs

This recipe uses 2 lbs of pork ribs (long or short ribs).

Assuming 1 unit = 2 tbs,

S&S Sauce:

1 unit of rice or cooking wine

2 units of vinegar

3 units of sugar

4 units of soy sauce (or 3 units)

5 units of water (or until water barely covers the pork)

Heat a large pot of water to a boil, and put chopped pork in and immediately reduce heat and simmer for 1.5 hours. Poke with chopsticks to check tenderness. Pour out the water, which can be reused for soup (but might be too oily).

Mix ingredients for SS sauce and add to the pork. Add water until it barely covers the pork. Put stove on high and cook for ~10 minutes (like when water is almost gone). While cooking, flip the ribs over after ~5 mins so sauce gets cooked into all the meat. Be careful not to overcook and dry out the sauce!
