清蒸萝卜丸子

用料:
丸子:

1:白萝卜400克,去皮洗净切细丝,盐1/2茶匙。

2:瘦猪肉馅250克(Costco买的,extra lean ground pork)。

3:豆腐一块125克,水冲洗后切小块。

4:鸡蛋1只,葱花3大匙,姜末2茶匙,盐2/4茶匙,糖1/2茶匙,万字牌生抽酱油1大匙,香油1大匙,绍酒1大匙,鸡粉1/4茶匙(可省),生粉3大匙,白胡椒粉1/8茶匙,香油1大匙。

 

芡汁:

5:水1/2杯(清鸡汤更好),盐1/6茶匙,蚝油1大匙。

6:黄,桔,红柿子椒末各1大匙。

7:生粉2.5茶匙,水2大匙拌匀。

8:葱花1大匙,香油1大匙。

 

做法:

丸子:萝卜丝加盐1/2茶匙拌匀腌30分钟。将所有2和4料放一盆里,然后用木勺搅上劲,然后将腌好的萝卜丝挤去水放入肉馅里,放 入豆腐丁, 再搅拌均匀成丸子馅。左手沾上水(这样肉馅不沾手),用一汤勺沾下水取一份肉馅,反复与左手掌和勺之间搓成2厘米大小的肉丸放入盘子里, 入蒸锅大火蒸10分钟。蒸好的丸子可以直接吃,但放点芡汁更漂亮。
