苦瓜炒鸡蛋

原料:苦瓜、鸡蛋。配料:油,蒜头,姜,食盐。

做法:把苦瓜切成均匀的薄片,撒上食盐,搅均匀,放置15分钟,以使其去掉部分水份和苦涩味道。把鸡蛋去壳后加入姜碎、食盐、少许油,搅均匀。准备功夫做 好了,开镬炒菜———把蒜头切碎后放油中翻炒几下,把苦瓜倒进锅里(当然,倒之前把盘里的水全部倒掉),镬铲压住蒜头、盖上盖子,让苦瓜吸收蒜头的香味 了,一会儿再翻炒。苦瓜炒熟后,在锅里铺开,最后将鸡蛋均匀倒进锅里,翻炒至熟。

私家秘笈:姜要切得尽可能碎,既可以加香,又可以减少凉瓜的寒凉之性。
